Our “crown jewel”. The number of awards obtained shows that it is one of the best cheeses in Spain. It has a pleasantly aggressive taste, with consistent texture and pasture, intense aroma and bouque reached very early on the palate.

Our new variety with Appellation of Origin ‘La Mancha’. Slightly dark brown bark, smeared in olive oil, aged and with its own mold. It has a regular halo, ivory paste with few eyes unevenly distributed, has a very deep smell due to its healing.

The most emblematic variety, which gives our company its name. In different formats, semi-cured, with an intense flavor; in virgin olive oil, ideal for those who like spicy touches; in lard and with rosemary. All of them, carefully matured.
