Pasta with a firm and compact consistency, ivory-yellowish color, lactic smell with long global persistence, spicy nuances, slightly acidic, strong and tasty flavor, pleasant and peculiar residual taste conferred by La Mancha sheep milk.

CONSERVATION TEMPERATURE: 4 and 8 ºC.

Ingredients: La Mancha sheep milk (98.40%), lactic ferments (0.002%), calcium chloride (0.05%), salt (1.5%), rennet (0.01%) and lysozyme-derived from egg (0.025%). Crust smeared in olive oil.
Maturation: From 12 months.
