‘Quesos Lominchar’ in your Kitchen: the best recipes with Manchego Cheese (Vol.3)

On time, as always, we go to our usual appointment with the best recipes with Manchego Cheese. We open volume 3 our recipe book. Prepare the ingredients, without forgetting our Manchego Cheeses to start preparing these “rich rich and well-founded” recipes.

Manchego Cheese Brochettes

We inaugurate our menu with these delicious Manchego Cheese brochettes. It is the ideal dish to whet your appetite. It is simple, rich and easy to serve.

INGREDIENTS (for 4 persons):

For the brochettes:

  • 300 gr. Manchego Cheese D.O.P. ‘La Mancha’ Montescusa Semicured.
  • 4 tablespoons of flour.
  • 1 egg.
  • Breadcrumbs.
  • 1 cup of Olive Oil.
  • Brochette sticks.

For the sauce:

  • 2 small tablespoons of lemon juice.
  • 2 tablespoons of balsamic vinegar.
  • 1 tablespoon of honey.
  • 2 tablespoons mustard.
  • 4 tablespoons of Olive Oil.
  • Ground pepper.
  • Salt.
Manchego Cheese Brochettes.

PREPARATION:

  1. Begin by cutting the Manchego Cheese D.O.P. ‘La Mancha’ Montescusa Semicured.. Make it elongated with one centimeter wide each. Place them on the brochette sticks. Watch out! Do it little by little to prevent the cheese from breaking.
  2. Next, beat the egg on a plate. In other containers, place the breadcrumbs and flour.
  3. Now, pass the skewers through the flour, then the egg, and then the bread, in that order. The better you cover the brochette, the crisper they will be. Let it rest in the fridge for about 15 minutes.
  4. Prepare the frying pan with the Olive Oil. Wait for it to heat up.
  5. With the very hot Olive Oil, fry the brochettes for about five minutes each. Do it little by little, so that they do not stick together.
  6. Pay attention in order to they don’t burn. The time to remove them will be when they are golden. Place them on a plate with kitchen paper to absorb the excess oil. Let stand.
  7. Now, turn for the sauce. Put the lemon juice, balsamic vinegar, honey, mustard, olive oil, and ground pepper in a bowl. Mix everything well. Add the salt to taste of each one.
  8. Place the brochettes once drained and tempered on a plate. You can put the salta on the same plate or in a separate container, as you like. Enjoy them!

Manchego Cheese Salad With Quince Vinaigrette

The first dish on our menu is a delicious salad. Light, delicious and quick to prepare. A mixture of flavors, between sweet and savory that you will love.

INGREDIENTS (for 4 servings):

  • 125 gr. of Lominchar Cheese Soft.
  • 12 quail eggs.
  • 16 cherry tomatoes.
  • 1 apple.
  • 1 bag of mixed lettuces.
  • 2 tablespoons of walnuts.
  • Salt.
  • Pepper.

For the vinaigrette:

  • 50 gr. of quince.
  • 4 tablespoons of cider vinegar.
  • 6 tablespoons of olive oil.
Manchego Cheese Salad With Quince Vinaigrette.

PREPARATION:

  1. We start by placing the eggs in a saucepan with boiling water for five minutes. After that time, refresh and peel them.
  2. Cut the Lominchar Cheese Soft into cubes.
  3. Wash the cherry tomatoes and cut in half. Also wash the apple and dice.
  4. On the other hand, place the lettuce on the plate and add the tomatoes, apple, cheese, walnuts and eggs cut in half.
  5. Next, turn for the vinaigrette. Cut the quince into small pieces. Place it in a bowl with the vinegar and heat for 10 seconds in the microwave. Later, strain the mixture and add the oil, salt and pepper.
  6. Lastly, add the vinaigrette to the salad. List!

Beef ‘Cachopo’ With Manchego Cheese

Our second course has the ‘cachopo’ as our main protagonist. A really strong dish but that is delicious and you can prepare it from time to time because it is very easy to prepare.

INGREDIENTS (for 2 ‘cachopos’):

  • 2 large fillets of beef.
  • 4 slices of Serrano ham.
  • 4 slices of Manchego Cheese D.O.P. ‘La Mancha’ Ariscado Cured.
  • Salt.
  • Pepper.
  • Flour.
  • 2 eggs.
  • Breadcrumbs.
  • Olive oil

Optional accompaniment:

  • Potatoes (for frying).
  • Piquillo peppers.
  • Olive or sunflower oil.
Beef ‘Cachopo’ With Manchego Cheese.

PREPARATION:

  1. Lay the beef steaks on a flat surface. Hit them with a mallet to soften and stretch. In addition, this way we give the meat juiciness.
  2. Also, season the steaks and place the slices of Serrano ham and the Manchego Cheese D.O.P. ‘La Mancha’ Ariscado Cured. Close the “little book” or put the other beef steaks. For added security, seal the ‘cachopo’ with toothpicks.
  3. Third, place the flour, the previously beaten egg and the breadcrumbs in containers. Now, pass the ‘cachopo’ through each of them, in that order.
  4. Prepare the pan with plenty of very hot oil. Then fry it for about three minutes on each side, until golden brown.
  5. Remove from the pan and place on kitchen paper to absorb the remaining oil.
  6. As an optional accompaniment you can fry some potatoes and place some piquillo peppers. Delicious!

Manchego Cheese Cream With Raspberries

Turn for dessert. We close this month’s menu with a very light and delicious dessert: a soft cream that everyone will like.

INGREDIENTS (for 6 persons):

  • 200 gr. Manchego Cheese D.O.P. ‘La Mancha’ Ariscado Semicured.
  • 20 raspberries.
  • 150 ml. of milk.
  • 100 ml. of liquid cream.
  • 2 gelatin sheets.
  • 50 gr. of sugar.
  • Glass sugar.
  • 2 tablespoons of honey.
  • Mint leaves.
Crema De Queso Manchego Con Frambuesas.

PREPARATION:

  1. We start by placing the gelatin in water.
  2. In second place, in a saucepan, heat the milk. Next, grate the Manchego Cheese D.O.P. ‘La Mancha’ Ariscado Semicured and add it. Stir well to avoid sticking.
  3. Time to add the gelatin. Before doing so, remove it from the heat. Little by little, as it cools, you will notice how the cream thickens.
  4. Then, in a bowl, add the cream and sugar, and beat well. Later, add the cream cheese mixture, continuing to stir.
  5. Now, place the resulting mixture in two molds (of the shape and size of your choice) and let it cool in the refrigerator.
  6. Finally, after a while, they will harden and you can unmold. Decorate with the raspberries, mint leaves and sprinkle the glass sugar on top. Sweeten your life with this delicious dessert!
