‘Quesos Lominchar’ in your Kitchen: the best recipes with Manchego Cheese. Christmas Special (Vol.4)

¡Merry Christmas! We’re looking forward to celebrating the Christmas holidays with all of you! To enjoy these dates even more, we open volume 4 our recipe book with Manchego Cheese. Prepare the ingredients, without forgetting our Manchego Cheese.

Meatballs stuffed with Manchego Cheese

We inaugurate our special Christmas menu with delicious and simple meatballs with Manchego Cheese. They are ideal for an initial snack and opening your mouth for the main dishes.

INGREDIENTS (for 4 persons):

  • 600 gr. minced meat (chicken, turkey, pork, … your choice).
  • ½ chopped onion.
  • ½ cup of breadcrumbs.
  • 2 eggs.
  • 4 tablespoons of chopped parsley.
  • 1 tablespoon garlic powder.
  • 400 gr. of Manchego Cheese D.O.P. Montescusa Semicured in large cubes.
  • 5 tablespoons of olive oil.
  • 1 clove garlic.
  • ½ tablespoon of ground cumin.
  • 1 bay leaf.

PREPARATION:

  1. Mix the meat with the egg, the breadcrumbs, the chopped parsley, the onion and the garlic powder.
  2. Form the meatballs by placing a cube of Manchego Cheese D.O.P. Montescusa Semicured in the center of each one.
  3. Time to brown them in a large frying pan with olive oil.
  4. Meanwhile, mash the tomato with the garlic and cumin. Pour over the meatballs, add the bay leaf and cook over medium heat for 15 minutes.

Potatoes au gratin with onion, bacon and Manchego Cheese

A delicious first course that is always a success. In addition, it is very easy to prepare because it is made only in the oven, so it saves us a lot of time.

INGREDIENTS (for 4 persons):

  • Oven resistant mold.
  • 5 medium-sized potatoes.
  • 1 onion.
  • 100 gr. of smoked bacon.
  • 150 gr. of Manchego Cheese D.O.P. Ariscado Cured.
  • Salt.
  • Nutmeg zest.
  • Freshly ground black pepper
  • Extra virgin olive oil.
  • 3 eggs.
  • 200 ml. of cream or cream for cooking.

PREPARATION:

  1. We preheat the oven to 180 degrees with heat up and down. Meanwhile, we peel the potatoes and cut them into thin slices.
  2. Después, cortamos en juliana la cebolla.
  3. We put the eggs in a large bowl. Season with salt and pepper, add nutmeg to taste and add the cream. We beat until everything is well mixed.
  4. Time to grease the mold with oil.
  5. To elaborate the layers! We place two layers of potatoes and sprinkle them with salt. Next, half the onion, the bacon and part of the Manchego Cheese D.O.P. Ariscado Cured.
  6. We spread the cream of eggs and cream. And we put back a layer of potatoes, the remaining onion, the bacon and the cheese. Then, we cover with more egg cream and cream.
  7. We place the last layer of potatoes and add the rest of the cream that remains.
  8. We grate a little of our Manchego Cheese and spread it on top.
  9. Time to bake for 35 minutes at 180 degrees. We put it covered with aluminum foil. Then, we remove the paper and let it brown for another 20 minutes. As advice, if you are clicking with a knife and you notice that it enters without difficulty, we will have it ready.

Beef steak in Manchego Cheese sauce

Second course turn. This time, the Manchego Cheese is the ideal accompaniment to a delicious beef steak. A delicious taste and they complement each other perfectly.

INGREDIENTS (for 4 persons):

  • 3 beef steak.
  • 1 medium onion.
  • Shot of brandy.
  • 1 glass of white wine.
  • 1 wedge of Manchego Cheese D.O.P. Montescusa Cured.
  • 400 ml. cooking cream.
  • Extra virgin olive oil.
  • Salt.
  • Pepper.
  • Cherry tomatoes.

PREPARATION:

  1. We start by peeling and chopping the onion. We put it in a pan with two tablespoons of oil.
  2. Now, we grate the Manchego Cheese D.O.P. Montescusa Cured and add it to the pan.
  3. Add the white wine and the brandy shot. We let the alcohol evaporate, we add the cream. We stir until it binds well.
  4. In another pan, we put the beef steak with a drop of oil.
  5. We make them to everyone’s taste, we add the salt and pepper before removing them. Next, we plate, add the sauce and some accompanying cherry tomatoes.

Manchego Cheese Cake

Time for dessert. Time to add a sweet and delicious touch to this special Christmas menu. This Manchego Cheese cake is ideal for Christmas Eve.

INGREDIENTS (for 4 persons):

  • 400 gr. of Manchego Cheese D.O.P. Ariscado Semicured.
  • ¼ liter of whole milk.
  • 6 large eggs.
  • Quince sweet.
  • Honey (Optional).

PREPARATION:

  1. We start by preheating the oven to 180 degrees.
  2. We grate the Manchego Cheese D.O.P. Ariscado Semicured.
  3. Next, in a container we put the milk, the eggs and the Manchego Cheese. We mix it with the mixer for a few minutes and pour the liquid into a container for the oven.
  4. Time to bake it at 160 degrees for 15 minutes. We are checking its cooking status by clicking on the cake.
  5. Next, we let it cool down and cut it into portions. We add a piece of quince paste and a little honey, to taste. A super delicious dessert.
