‘Montescusa’ is a variety of Manchego Cheese with Protected Appellation of Origin, made with pasteurized whole milk from the Manchego breed, with a maturation of 3 to 4 months and an ivory-colored rind.

It has a pleasantly aggressive flavor, with texture and consistent pastiness, with an intense aroma and bouque reached very early on the palate.
